Introduction

Whole wheat banana and apple waffles with flax seed meal. Homemade applesauce is used as substitute for butter along with flaxseed meal. Easily frozen so you can put them in your toaster later. Ingredients

    2 cup Whole Wheat Flour (Gold medal used for nut. info)
    3 overripe bananas*
    1 cup applesauce **
    1/2 cup brown sugar
    1 cup flax seed meal
    5 eggs
    1 1/2 tsp Baking Powder

Directions

1 serving is 2 waffles.

Combine Wet Ingredients: Applesauce, Bananas, and Eggs. Mix well using hand blender or mixer.

Using sifter or wire strainer add dry ingredients: Flour, Brown Sugar, and Baking Powder. Stir in Flax Seed Meal.

Heat Waffle Iron and spray with non-stick cooking spray+. Use 1/4 c mixture per waffle. (This depends on the size/style of your waffle iron) Cook for 6 minutes. These brown more quickly because of the flaxseed meal and are not 'sweet' waffles, but are great with a low cal/fat free syrup. Just a little though ;)

* For Bananas I put away overripe bananas in the freezer. When the time comes to use them, I defrost at room temperature and they mush up nicely

** For applesauce I baked peeled, cored and baked 4 yellow delicious apples. Placed in a baking dish with 1/2cup of water and topped with a dash of cinnamon and nutmeg. Bake at 350 till soft to fork and mash with hand blender. NO SUGAR ADDED!

+ I used Mazola - it's a 'free' spray. No cal, cholesterol etc. etc.
