Ingredients

1 Medium Egg
1 Egg White
1 Slice of Fat Free Cheese
1/2 Cup of Chopped Broccoli Florets
Directions
Lightly oil a frying pan with extra virgin olive oil or use a non-stick frying pan. If you oil the pan, put the pan on low heat and evenly distribute the oil over the entire pan. In a bowl, mix one medium egg and one medium egg white. Use a fork or wisp to beat egg mixture for about two minutes.
In a separate pan cook 1/2 cup of broccoli using only water. Cook broccoli for 8-9 minutes or until tender. Drain broccoli and chop florets into fine pieces.
Pour egg mixture into lightly oiled (or non-stick) frying pan on medium heat. Allow egg mixture to coat the bottom of your frying pan. Once the bottom side is done, flip your omelet to let the inside cook. On one half of your omelet place a slice of fat free cheese and sprinkle chopped broccoli pieces onto cheese. Fold omelet so that the cheese and broccoli are inside of the egg. Allow cheese to melt then remove the omelet from the pan.
Makes 1 Serving; serve with 1 cup of your favorite fruit for a filling breakfast!
*Note: Broccoli may be substituted for any other vegetable.
