Ingredients

200g green and brown whole cooked lentils
125g dried brown rice
2 medium carrots, grated
850ml vegetable stock made from 2 stock cubes and water
1 garlic clove, crushed
5 basil leaves, roughly torn
salt and black pepper
Directions
1. Rinse the cooked lentils. Place all ingredients, less the seasoning and basil, in a large pot. Bring to the boil. Reduce heat, cover and cook until rice is tender. Season to taste and stir through basil before serving.
2. Add your favourite, seasonal vegetables to complete this dish.
