1 bag dry 16-bean soup mix with flavor packet
1 bag frozen Thai stir fry vegetables
6.5 ounces of yellowfin tuna (or other fish), broken up into small pieces
Directions
Prepare the beans per package directions (this accounts for the eight minutes it takes to boil the beans for two minutes). Drain and rinse.
Pour beans, 6 cups of water, one 1-lb package of frozen vegetables, and the tuna into any size crockpot. Cook for about three hours on low. Can be left for longer if needed. For example, put it together in the morning and it'll be done by evening.
Makes 12, one-cup servings. One serving provides over half of the fiber you need in one day.
