Introduction

Conch fritters are a great delicacy in Florida and the Caribbean. This is an adaptation of one of our favorite appetizers using whole frozen cooked clams instead of conch easily obtained everywhere and baking them instead of deep frying them. Makes 12 fritters as an appetizer or 2 dinner portions of 6 fritters each. Very easy and fast. About 5 minutes prep time Conch fritters are a great delicacy in Florida and the Caribbean. Ingredients

    A package of Frozen cooked clams, 8 oz
    2 cloves minced Garlic
    1 large egg
    1 TBS of Cento diced Hot Cherry Peppers (or use any red pepper you like)
    1 TBS of diced Jalapeno Peppers - Diced, 1 tbsp (remove)
    1 cup of Hodgson Mill Multi Grain Buttermilk Pancake Mix W/Milled Flax Seed & Soy

Directions

Defrost the clams in the refrigerator overnight.

Put them in a medium mixing bowl and rinse them well with cold water. Add an egg, a TBS of diced hot cherry peppers, a TBS of diced Jalapeno peppers. Mix well

Add a cup of Hodgson Mill Multi Grain Buttermilk Pancake Mix W/Milled Flax Seed & Soy and mix everything with a fork.

Refrigerate at least an hour.

Preheat the oven at 375. Form 12 balls from the mix and press them to form fritters. Bake for 20-30 minutes until golden in color.

They are great with your favorite remoulade or a Mango chutney.

Serves 2 as a dinner or an excellent appetizer for 4

    Basically these were good. I didn't have the jalapenos, which I think would give these a needed kick. I will make these again. My family liked them too. And BENCHBOXER, if your religion doesn't allow you to eat certain things, don't eat them and don't rate them for those who do!!!! - 8/28/11
