Ingredients

    1.5 lb bonless shinless chicken breast cut into small cubes
    2 tbls olive oil
    4 cans low sodium low fat chicken broth
    2 cups sliced carrots
    1 cup slice celery
    1 med onion diced
    2 cans red kidney beans
    101/2 cup lundberg wild rice mix
    1 tsp cajun seasoning
    2 tbls garlic and herb seasoning

Directions

saute chicken in olive oil, toss with the seasonings, add vegatables and saute for about 5 min.,, add broth and bring to a boil,, add the rice and cook until the rice is tender, take care to not over cook the rice, this will make about 8 hearty servings
