Introduction
This is my reduced calorie, reduced fat, version of Cheesecake Factory's Luau Salad. (The restaurant version has 800 calories, 31g of fat, 90g of carbs.) My wrappers are baked instead of fried, and I'm still searching for low carb sweet & sour sauce but until I find it, the regular kind will have to do for now. Ingredients

10 ounces grilled, boneless, skinless, chicken breast, diced
1/2 cup mango, diced
1/4 cup carrots, thin strips
1/2 cup cucumber, chopped
1/4 cup onions, chopped
1/2 cup green bell peppers, chopped
1/2 cup red sweet peppers, chopped
2 Tbs. scallions, chopped
3 cups romaine lettuce or other salad greens, chopped
4 Tbs. Girard's Balsamic Vinaigrette fat free salad dressing
1 or 2 tsp. Splenda (depending on how sweet you like it)
1 Tbs. rice vinegar
1 Tbs. Kikkoman Sweet & Sour Sauce
1/2 tsp Sesame Oil
4 Nasoya Egg Roll Wrappers
Directions
Preheat oven to 375.
Whisk salad dressing, splenda, vinegar, and sesame oil in a small bowl; set aside.
Place all salad items in a bowl, along with diced chicken; pour salad dressing over mixture and toss to coat. Divide mixture in half.
Spray both sides of egg roll wrappers with cooking spray, bake for 4-6 minutes or until crisp (times may vary depending on your oven). Remove from oven and cool.
Lightly brush one side of baked wrappers with a small amount of sweet & sour sauce.
To assemble: Place a small amount of salad mixture on two plates. Top with wrapper. Add more salad mix on top, followed by another wrapper and the remaining salad mix.
*Note - Because the wrappers are baked, their consistency is not quite as "fluffy" as the fried kind, but they still have a lot of crunch.
Also, the regular recipe calls for sesame seeds and macadamia nuts, I omitted these to help reduce the fat and calories. You can add them if you wish, but know that it will change the nutritional values.
