Introduction

Ingredients

Rice
(white or brown) fresh chopped cilantro
limes
chicken breast
peanut butter
coconut milk
flour tortilla (optional)
Directions
PREP:
Cut of 3 skinless chicken breast into a little larger than bight size pieces (big enough) to go on kabobs
On low heat, in sauce pan combine 1 can coconut milk and 2 cups peanut butter and stir constantly until oil starts to extract and milk and peanut butter combine into nice consistancy
(If you get it too hot the peanut butter starts to look like its curdled, add more coconut milk (or milk if you are out of coconut milk) to thin consistancy.
Chop one bunch cilantro very thinly, try to get leaves off the stems as much as possible (thinly chop)
Cut 2 limes into 3 pieces per lime
Directions:
Mix 3/4 the peanut butter mixture into bowl with chicken slices, slather, and chill in fridge for minimum 1/2 hour
skewer chicken and either bake in oven, or bbq (my favorite)
cook rice, when done add 3/4ths the cilantro and squeeze 3 lime wedges and stir, cover with lid to keep warm until chicken done
Once chicken bbq'd to the consistancy you like bring it off the bbq and sprinkle with cilantro
ready to serve:
Rice and chicken and use peanut sauce as side dipping sauce
