Introduction

A creamy pumkin soup with a twist of creamed corn and worcestershire sauce, low in cal's and very filling. A creamy pumkin soup with a twist of creamed corn and worcestershire sauce, low in cal's and very filling.

Ingredients

    1kg of pumpkin chopped, butternut gives a great taste.
    2 x large onions chopped
    4 x cups of chicken stock or vegetable
    1 x 400g can creamed corn
    2 Tbl of worscestershire sauce
    3 tbl of cream (optional)

Directions

chop onion and pumpkin in to cubes about 2cm square, put in large bowl with stock. cook on high in microwave for around 15 min or untill cooked. You can use a crockpot or normal pot if you like. when cooked let cool a little and either blend in blender or mulie untill creamy. Put the pumpkin back in bowl and add the creamed corn and worstershire sauce. reheat until just boiling, add cream if using and serve. makes 6 good size 250ml cup servings.
