Introduction

Chicken dumplings like my fiance's mom makes them. No veggies (although their addition would probably improve the nutrition); just basic dumplings and chicken. I might make a variant with veggies sometime, but he doesn't like it changed, so... As it is, a definite comfort food! Chicken dumplings like my fiance's mom makes them. Ingredients

    2 small Chicken Breasts
    1 dash Salt
    2 tsp Onion Powder
    1 c Flour
    1/2 tbsp Baking Powder
    1 tsp Salt
    1 Egg
    1/2 c Milk
    2 Chicken Bouillon Cubes

Directions

Combine chicken, dash of salt, and onion powder in enough water for soup. Boil. When the chicken is cooked through, remove and cut into bite-size pieces. Add back to the broth with 2 bouillon cubes. Turn to medium-low heat to simmer.

Mix flour, baking powder, salt, egg and milk. Drop by small spoonfuls into broth. Stir frequently and cook for about 45 minutes, or until dumplings are cooked through.

Each serving is *about* one cup - don't count on exact measurements, though! Your best bet is to divvy it up between four bowls.
