Introduction

This no-guilt recipe makes a moist, sweet bread that goes well with many different ideas, and is quick and easy to make. And the best part - barely any fat!


SERVING IDEAS:

1. You may also add in 1 Cup of chopped nuts, chocolate chips, dried fruit, etc. to the mixture for added taste and texture.

2. When made in the 8x8" pan, it opens up so many possibilities! I use a cookie cutter to cut out tiny cake shapes.

For a light, more breakfast-y option, you can ice them with light yogurt, flavored or non.

For more of a dessert/snack cake, ice with frosting or glaze and decorate as desired.
To be extra fancy with the snack cakes, you can cut each horizontally in half. Put a thick layer of icing on the cut sides of each cake then stack the top halves back on to them, and THEN ice the whole thing. They look adorable!

My personal favorite is to serve the bread warm, with ice cream!

Ingredients

    1.5 Cups Sugar
    1.5 Cups Flour
    5 Egg Whites
    2 T Applesauce, unsweetened
    4 T Cocoa Powder
    2 T Instant Coffee
    1 t Vanilla

Directions

Preheat oven to 350°, grease an 8x8" baking pan. (If you want to just make a loaf of bread instead of cakes or bars, use a loaf pan.)

Mix sugar, egg whites, applesauce and vanilla together. Add flour, cocoa powder and coffee. Stir well.

Spread batter into pan and bake until done (about 30 minutes for the 8x8 pan).
