Ingredients

    2 1/2 skinned bonless chicken breat
    1 cup sliced fresh zuchinni
    1 cup chopped fresh tomatoe
    1 cup raw white onion copped chunky style
    1 cup sliced fresh summer squash
    2Garlic cloves(optinal)
    cumin powder 1 tsp
    dash o salt
    pepper
    1 tsp olive oil
    lime(optional)
    cilanto(optional)

Directions

Alright everyone this meal is quick, easy and so muck fun to make cause its so healthy and delicious!! Once these aromas start to take over your kitchen you will understand why I love this recipe so much!!
1st you want to get a pot of water on the stove and set it to boil, 2nd you will chop your fresh skinned chicken breast and set aside, by this time all your veggies that the recipe calls for should be chopped and set aside. Get your pan and set the heat on medium and add your olive oil, if you decide to include garlic in your dish which I personally love just adds so much flavor you can throw these cloves in when the olive oil starts getting a bit hot. Go ahead and throw in your chicken cubes and lightly grill these for about 10 mins, then add your chopped veggies in and grill for about 5 mins mix the grilled chicken and veggies for those 5 minutes, after this chicken and veggie medley are slightly grilled you want to slowly add in that boiling water followed by your spices, mix the chicken and veggies a bit into the hot water to create a stew like consistency. Last you will want to let simmer for about 30 mins and let the aromas of yummeness take over your kitchen. Top with fresh cilantro (optional) I also like to squezze in a lime right before I eat it to give it a kick of flavor
