Ingredients

    1 block firm tofu
    1 bunch of long flat chives or garlic scapes
    2 field tomatoes
    4 cups broth (I use either pork or chicken; plain water works as well - just add more salt and pepper)
    2 Tbsp fish sauce
    salt and pepper to taste

Directions

Bring broth or water to a boil. Cube tofu and add to boiling pot along with fish sauce. Bring to a boil again and add flat chives (cut to 5" long) and sliced tomatoes. Bring to a simmer. Serve. Makes 4 1-cup servings.

Notes: I use a simple homemade broth from either chicken or pork bones. I add garlic and LOTS of ginger to the stock. Flat chives are sold in Asian markets in the herb section, and garlic scapes (the green stem of young garlic bulbs) is starting to become more common at Farmer's Markets.
