Introduction

This is from Redbook Magazine (June 2009). I substituted fat free feta for the regular feta to save a few calories and some fat grams. I also added artichoke hearts. Ingredients

    SKEWERS
    12 bamboo skewers
    24 cherry tomatoes
    3 oz feta cheese, cut into 12 (1/2- inch) cubes
    12 kalamata olives, pitted
    ½ small red or sweet onion, cut into 12 (1/2-inch) pieces
    1 can marinated artichokes, rinsed

    VINAIGRETTE
    2 tsp lemon juice
    2 tsp red wine vinegar
    4 tsp fresh oregano, chopped
    2 Tbl extra virgin olive oil
    salt and pepper

Directions

SKEWERS: Thread skewers starting with tomato, then artichoke, feta, an olive, onion and another tomato.

VINAIGRETTE: In a small bowl, mix together lemon juice, vinegar and 2 tsp oregano. Whisk in oil until mixture thickens. Season with salt and pepper to taste.
Arrange skewers on a platter. Spoon dressing over skewers and sprinkle with remaining oregano.
