Ingredients

1.75 cups flour sifted
1 tsp baking powder
0.5 tsp baking soda
0.25 tsp salt
2 eggs
0.5 cups sugar
1 6oz container of fat free strawberry yogurt
1/2 cup olive oil
1 ripe banana (mashed)
optional:
1 tsp cinnamon
0.5 tsp nutmeg
1 tsp vanilla extract
Directions
-preheat the oven to 350 degrees
-use a 9" X 5" and coat with non-stick oil spray
-in one large bowl (dry ingredients) combine flour, baking powder, baking soda and salt
-in another bowl (wet ingredients), beat the eggs eggs, stir in sugar,yogurt, olive oil, and banana; once well mixed add the cinnamon, vanilla extract, and nutmeg if you want to add these optional ingredients
-combine the wet ingredients into the dry bowl and mix until a smooth mixture is made
-spoon the mixture into the prepared loaf pan
-bake for 50 to 60 minutes or until toothpick through the center comes out clean
-let cool on a rack before serving
