As a one pan meal this works great and everyone will love it! It's quick and easy and your kids will ask for more. The fun part of it add what you like to it, change the corn for green beens. Number of Servings: 6

Ingredients

    Onions, raw, 1 cup, chopped
    Bush's, Black Beans, 1 can
    Yellow Sweet Corn, 1 can
    Stewed Tomatoes, 1 can
    Mushrooms, fresh, 1 cup, pieces or slices
    Parsley, dried, 1 tbsp
    Garlic, 1 tsp
    Ground beef, extra lean, 8 oz
    White Rice, long grain, 2 cup
    Chicken Broth, 1 can and 1 can of water

Directions

Brown ground beef in stew pot, drain off any excess fat, place back in pot adding the garlic (fresh if you wish), parsley (fresh if you wish) and black pepper, mix up and then add remaining incredients (corn, black beans, stewed tomoatoes, rice, and broth), don't forget to rinse the black beans and corn before adding cover bring to a boil and let cook on low for 20 minutes - just like cooking rice. Let stand for 5 minutes with heat off and serve.

    Perhaps a tiny bit on the dry side and I added some taco seasoning to spice it up (we like the zing!) but it went over well and was easy peasy! Thanks! - 8/10/09

    Thank you very much for your comments. I do agree with you but my wife can not take all the spice, that is why it was on the mild side. Thanks again!

    Very good recipe. I made this tonight but I did make a couple of changes. I used a can of diced tomatoes instead of stewed (because we were out of stewed.) I also used ranch style beans instead of black (personal preference). I omited the parsley. Next time I may try sausage instead of hamburger - 9/5/11
