Ingredients

3 cups vegetable broth
1 cup skim milk
1 tsp olive oil
1 large onion, thinly sliced
4 cups cauliflower, chopped
salt
fresh ground pepper
pinch of nutmeg
pinch of cinnamon
Directions
1. In a large saucepan, saute onion in olive oil until translucent.
2. Add broth and cauliflower.
3. Bring to boil over med-high heat.
4. Cover & reduce heat to medium low. Simmer until potatoes& cauliflower are soft enough to puree -- about 12-15 minutes.
5. Using a food processor or immersion blender, puree the soup then return to pot.
6. Add skim milk, nutmeg, cinnamon, salt, and pepper.
7. Gently warm over low heat. Do not boil.
