Ingredients

    1 Green Bell Pepper (chopped)
    1 bunch Green Onions (chopped)
    1 bag Frozen Corn (thawed) *I use Green Giant Steamers*
    1 can Black Eyed Peas (drained)
    1 can Black Beans (drained)
    1 can chopped Jalapenos (drained)
    8 Roma Tomatoes (chopped)
    1 packet Good Seasons Zesty Italian dressing mix
    1/3 cup Olive Oil
    1/4 cup White Vinegar
    Garlic Salt to Taste

Directions

Combine first 7 ingredients in a large bowl and mix well. Mix dressing mix, olive oil, and vinegar - pour over other ingredients. Sprinkle garlic salt to taste and stir well. This usually tastes best after it been refrigerated for 6+ hours. Makes (18) 1/2-cup servings.
