Introduction

This slaw is light, fresh, and sweet-just right for end of summer barbeques! This slaw is light, fresh, and sweet-just right for end of summer barbeques!

Ingredients

    Zest and juice of lime, cider vinegar, honey, small red sweet peppers (or jalepeno if you want the kick) cut into chunks, 2 semi-ripe mangos, peeled and grated; 1 larg jicama, peeled and grated; 1 bunch of cilantro, and half a can of crushed pineapple drained. Salt and pepper to taste.

Directions

In a large bowl, whisk the zest and juice of lime, apple cider vinegar, honey, salt and pepper to taste. Add red pepper chunks. Peel and grate the mangos-it's preferable to use a semi-ripe because it's easier to grate. Peel and grate the jicama. Add both to the dressing. Drain a 15 oz can of crushed pineapple and use half a can of pineapple-add to slaw. Mix and chill for at least an hour. Can serve on pineapple boats or alone. Nice with most summer foods!
