Number of Servings: 7

Ingredients

    Whisk togethier in a bowl:
    1 cup fresh-ground whole wheat or spelt flour
    1 tsp aluminum-free baking powder
    1/2 tsp baking soda
    1/2 tsp salt

    In a separate bowl mix together:
    1 cup raw milk
    1 cup plain yogurt
    2 eggs
    1 tbsp melted butter or cocunut oil


Directions

Mix wet and dry ingredients together, do not over mix. Let batter sit for about 10-20 minutes, it will rise and get really fluffy. Heat a cast iron skillet to medium heat. Melt a little butter for each pancake. Pour 1/4 cup of batter for each pancake. Top with maple syrup, raw honey or fresh fruit.

Makes 14 pancakes.

    Tried this recipe this morning. Used olive oil instead of the margerine, and they turned out great - light,fluffy, and delicious! - 8/23/09
