Ingredients

    - 1 cup all-purpose flour
    - 1/2 cup whole-grain flour
    - 1 cup oat meal
    - 1/3 cup sugar (preferably brown)
    - 2 tsp baking powder
    - 1 tsp baking soda
    - 1/2 tsp salt
    - 1 egg
    - 3/4 cup milk
    - 1/4 cup oil
    - 1 cup mashed bananas (aprox. 3 medium-sized ones), mixed with 3 tsp cinnamon.

Directions

Makes 16-20 medium-sized muffins.

1. Mix the flour, oat meal, sugar, baking powder, soda, and salt.

2. In another bowl (large), beat the egg until it is white and fluffy.

3. Stir in the milk and oil.

4. Add the mashed banana/cinnamon mixture, stir thoroughly.

5. Add the flour mixture, stir until just combined.

6. Divide the batter into paper bake cups (or any other kind of muffin bake cups/tins), and bake for 16-20 minutes at 400 degrees F (205 degrees C).
