Introduction

Sometimes the trick to grilling is in the topping. Saute those garden veggies to make this dish, especially good over grilled chicken or turkey. Sometimes the trick to grilling is in the topping. Saute those garden veggies to make this dish, especially good over grilled chicken or turkey.

Ingredients

    2 large bell peppers, any color, chopped
    2 medium tomatoes--use different colors if you can, chopped
    1 medium yellow onion, chopped
    any herbs you want (I use 6 basil leaves and 1 T. oregano)
    1 tsp minced garlic
    2 T. olive oil
    opt: mushrooms to taste
    opt: hot pepper to taste

Directions

Put bell pepper in skillet with olive oil and saute until nearly soft. Add onion (and mushrooms if desired). When onion's soft, add tomato, garlic and herbs (pepper if desired). Saute just until flavors blend and a bit of "sauce" forms.
