Introduction

I can't believe how good this is and how easy. I used leftover roasted chicken from the grocery store, but you could cook your own or even used canned chicken. Ingredients

    1.5 C Chicken (cooked)
    1/4 C Brown rice
    1 Can 98% FF cream of chicken soup
    32 oz Canned chicken broth
    1/ C each chipped onions, carrots and celery
    3 Cloves chopped garlic
    1 can small white beans- drained
    1 Cup chopped fresh spinach
    1 cup sliced fresh mushrooms
    salt and pepper to taste
    1/8 tsp red pepper, sage and fennel seed
    1/4 tsp of basil and oregano
    1/4 C parmesan cheese

Directions

Heat olive oil and sautee celery, onion, garlic and carrots until almost tender, then add mushrooms and continue to sautee veggies until all are tender. Mix soup and 1 cup broth and set aside. Add 2 cups broth and heat to a low boil. Add rice, cover and simmer 10 min. Remove lid, add chicken soup/broth slurry and seasonings, adjusting to taste. Add beans and simmer for 15 min more. Add chopped spinach 5 minutes before serving. Serve in big bowls sprinkled with 1 Tablespoon parmesan cheese.
