Introduction

Good way to use up all those gian zucchini. Good way to use up all those gian zucchini.
Number of Servings: 6

Ingredients

    4 cups grated zucchini
    2 egg whites, beaten
    4.5 TBS grated parmesean
    salt and pepper to taste
    olive oil spray for baking dish

Directions

Preheat oven to 400f
This makes 6 servings
Mix grated zucchini, beaten egg whites and 3 TBS parmesean together in large bowl and season to taste. Fresh herbs are lovely in this - parsley, basil, rosemary etc...
Coat baking dish with olive oil spray, and add zucchini mix
Top with remaining cheese and bake at 400f for about 30 min.
