Introduction

This is a quick & simple variation on stuffed peppers I came up with. Roasting the peppers brings out their natural sweetness. Pair this with low-fat garlic bread and a spinach salad--delicious! Ingredients

    3 c. cooked brown rice
    6 med. green bell peppers
    1 T. olive oil
    1-1/2 lb. lean ground turkey
    2 t. garlic powder
    2 t. minced onion
    1/2 t. Mrs. Dash salt-free seasoning
    1 jar Wegmans Smooth Marinara Sauce (or substitute your own; nutrition info reflects this brand)

Directions

Preheat oven to 350 degrees. Cook the rice according to instructions. While rice is cooking, cut peppers in half lengthwise and clean out seeds. Place pepper face-down on large cookie sheet. Brush olive oil on top of peppers. Bake for 15-20 minutes. While the peppers are baking, brown ground turkey in skillet; add spices toward the end of the cooking time. Add jar of sauce and cooked rice to turkey and stir. Fill each pepper half with about 1/2 cup of mixture and serve.
