Ingredients

3 cloves of garlic
12 medium to large shrimp
15 small bay scallops
2 tspn fajita seasoning
1/4 cup of raw onions
1/4 cup of red bell peppers
1/4 cup of yellow bell peppers
1.5 tbsp of guacamole
2 tbsp of sour cream
1/4 cup of shredded lettuce
1/4 cup of diced tomato
1 jalapeno pepper, chopped
4-6 tortillas
1 cup of white rice, cooked
.25 cup of shredded cheese
Directions
1. season shrimp and scallops with fajita mix and garlic
2. saute shrimp and scallops mixture in pan using non stick spray
3. saute onion and peppers in pan using non stick spray
4. take cook riced and mix with 1 tbsp of sour cream
5. top rice with cheese and melt
6. layer sauted shrimp/scallops onto rice
7. place sauted onions and peppers next to shrimp/rice mixture
Guacamole Salad
1. take guacamole and mix with 1 tbsp of sour cream
2. add chopped jalapeno
3. add diced tomato
4.layer on top of shredded lettuce
Serve with tortillas
