Ingredients

3lbs Chicken Breast (boneless, skinless), chopped into 1 inch pieces
1 tbs sesame oil
3/4 cup low-sodium soy sauce
1 can fat-free chicken broth
2 tbs fresh garlic, chopped
2 tsp fresh ginger, finely chopped
1/2 medium vidalia onion
2 tbs crushed red pepper
1 tsp white pepper
4 broccoli crowns, chopped
2 sweet red peppers, julienne
2 cups fresh snap peas
1 package linguine
Directions
Makes 9-10 1 cup servings (1 cup vegetable/chicken mixture, 1 cup linguine)
Heat 1 tbs of sesame oil in skillet. Cook chicken in oil about 3 minutes. Season chicken with salt and black pepper while cooking. Add garlic, ginger, onion and soy sauce. Cook for 1-2 minutes. Add broccoli, sweet red pepper, crushed red pepper, white pepper and 1 cup of chicken broth. Cover and let steam for 3-4 minutes. Add snap peas. Cover and let steam another 2-3 minutes. Mix the rest of the chicken broth with 1/4 cup of corn starch. Add to skillet to thicken broth into sauce. Serve over linguine.
