Introduction

This meatloaf is made with a blend of meats (no veal) and ordinary household spices that give it the savory flavor, but with a touch of sweetness. My family loves this meatloaf and won't let me make it any other way! It is truly the best meatloaf I have ever had. Ingredients

    Topping:
    1/2 cup catsup
    1/2 cup brown sugar
    1 teaspoon dry mustard

    Meatloaf:
    1 pound ground beef
    1/2 pound ground pork
    4 slices bacon, cooked crisp and crumbled
    1 large egg lightly beaten
    1/4 cup finely chopped onion
    3 tablespoons light brown sugar
    1/4 teaspoon black pepper
    1/4 teaspoon dry mustard
    1/4 teaspoon dry nutmeg
    1/4 teaspoon dry sage
    1/4 teaspoon garlic salt
    1/2 cup catsup
    1 tablespoon Worcestershire sauce
    3 slices bread torn into pieces and soaked in 1 cup milk

Directions

Preheat oven to 350. Lighly oil a 9x5x3" loaf pan. Ina small bowl, mix together all topping ingredients; set aside.

Cook, bacon til crisp, let cool and crumble. Meanwhile, sautee onion in bacon drippings.

In large bowl, mix together all mealoaf ingredients adding soaked bread last. Place meatloaf mixture in prepared loaf pan. Bake 45 minutes. Remove from oven and rain excess fat. Spread topping over top and bake another 45 minutes.

If preferred, instead of cooking and crumbling bacon, you can lay uncooked bacon across top of meatloaf before placing in oven. You would then just saute onions in a little olive oil, vegetable oil or butter before adding to meatloaf mixture.
