Introduction

Delicious vegetable-based chili with just a touch of meat for texture and flavor. It could easily be adjusted to full vegetarian by leaving out the meat or using ground meat substitute. Ingredients

    5 oz lean ground beef
    I medium onion, chopped
    4 cloves garlic, minced
    1/2 pound mushrooms, chopped
    2 cups cauliflower pieces
    1 medium yam, diced
    1 cup zucchini, chopped
    1 large green or red bell pepper, chopped
    2 cups frozen corn kernels
    28 oz can Roma or plum tomatoes, roughly chopped, with liquid
    2 19 oz cans red kidney beans, rinsed and drained
    2 stalks celery, chopped
    1 cup tomato or V8 juice
    1 tbsp cumin
    2 tbsp chili powder
    1 tsp paprika
    1 tsp salt
    1/8 tsp cayenne pepper (or more to taste)
    2 tbsp tomato paste

Directions

6 generous servings

Saute beef, onions and garlic in large stew pot over med heat for about 5 minutes.

Add mushrooms and saute for another 5 minutes.

Stir in cauliflower, yam, zucchini, green pepper, corn, tomatoes and liquid, kidney beans, celery, tomato juice, and all spices and tomato paste.

Bring to a boil, reduce heat and simmer for 30-60 minutes.

Serve with a dollop of sour cream for extra yum!
