Introduction

Ingredients

    Chicken Breast, no skin, 1 unit (yield from 1 lb ready-to-cook (remove)
    *Extra Virgin Olive Oil, 1 tbsp
    *Lucerne Plain Fat Free Yogurt, 3 oz
    *Grey Poupon Dijon Mustard, 9 tsp
    Grapes, .33 cup, seedless
    Apples, fresh, .33 cup, quartered or chopped
    Thomas Sahara 100% Whole Wheat Wraps, 4 serving

Directions

Preheat grill to high heat.
Rub chicken all over with 1 tsp olive oil and season with salt and pepper to taste. Place on grill and cook 3 - 5 minuites per side, or until chicken is no longer pink in juices run clear. Allow chicken to cool, then cut into bite-sized cubes.

In large bowl, whisk together 2 tsp olive oil, the yogurt and mustard. Add the chicken, grapes and apple. Gently toss well to combine. Season with salt and paper to taste and serve.

Serve either as a wrap; or serve over a bed of lettuce or fresh spinach; or serve on multi-grain bread.

    If you have ever had the chicken salad at Arbys this is almost exactly the recipe when you add the celery back in. Just add 1/8 c pecans and this has substiuited the yougart instead of mayo and i think this one tastes soo much better - 9/6/09

    I have actually had Arby's wrap and it IS good... Just have to remove celery!! LOL

    I even devised my OWN wrap based on Arby's.. then I found THIS ONE in TBL Recipe book! LOL
