Spicy summer soup using fresh ingredients. Low fat and filling for the summer when you don't need anything heavy in your stomach. Can be made and stored for later use. Ingredients

    15 tomatillios
    5 tomatos
    1 potato
    1 onion
    3 cups diced summer squash
    6 peperoncini pepper
    2 T pepper juice
    1 onion soup pack
    2 tsp fresh thyme
    2 whole bay leaves
    1 cup barley
    2 cups water

Directions

Peal tomatos and chop tomatos, onions, potato, and squash into bite size pieces and place them in a pot. Take the skins off of the tomatillios and wash. Dice into 1 in pieces and add to the pot. Chop the peperoncini into small slices and add to pot along with juices. Stir in onion soup, spices and add water. Boil for 10 minutes and then simmer for 45. Remove the bay leaves and serve. This makes 8 one cup servings.
