Introduction

Ingredients

6 eggs, beaten
750 gms canned tomatoes (one small box Pomi tomatoes works great)
1/2 tsp. salt
1/2 tsp. ground black pepper
PAM Olive oil spray
Directions
1. Spray a frying pan with PAM olive oil (or regular) spray.
2. Pour in canned tomatoes on low to medium heat, allowing all the liquid to cook off...leaving semi-thick tomato mixture. Add salt & pepper to taste.
3. Beat 6 eggs and add to tomatoes to cook, stirring constantly. (You can use the equivalent egg substitute.)
When eggs are cooked thoroughly, it's done.
You can serve in pita, Italian bread, or in a plate.

sounds good but can you lower the sodium.. that would kill me - 8/31/09

That's why I suggest Pomi tomatoes...they have a much lower sodium content than regular canned tomatoes...and you can eliminate the salt to help lower it. Pomi tomatoes was not among choices of ingredients on SP...or use fresh tomatoes that you've peeled & ground.
