Ingredients

2 c. whole wheat flour
1 t. baking soda
1 t. baking powder
.5 t. salt or less
2 eggs
.5 c. canola or olive oil
8 oz. plain yogurt
citrus zest (of one orange, lemon or lime)
1 c. fresh figs, coarsely chopped or mashed
Directions
Preheat oven to 400 degrees F. Sift flour, baking powder, baking soda and salt together. Add yogurt, eggs and oil in turn, stirring well. Add mashed fresh figs and zest of choice, as well as walnuts and/or dried cranberries if desired (not in calorie calculations). After batter is thoroughly mixed, divide into muffin tins (greased if not silicone). Makes 12 not-very-sweet muffins. Using vanilla yogurt will make them sweeter, but also add calories.
