Ingredients

    jasmati rice 2.5 cups
    Coconut milk 2 cans lite 14oz
    Coconut milk 1 can regular 14 oz
    Salt 1 dash

Directions

1. In a large saucepan over high heat, combine rice, coconut milk and salt; bring to a boil.
2. Reduce heat, cover and simmer for 20 to 25 minutes, or until liquid is absorbed and rice is tender.
