Ingredients

    1 lb ground turkey (93% fat free)
    1 2/3 cups black beans (cooked)
    2 cups white rice (long grain) cooked
    1/2 cup chopped green bell peppers
    1/2 cup chopped red bell peppers
    1 cup chopped celery
    2/3 cup chopped onion
    1 cup diced tomatoes
    3 small jalepeno peppers (chopped)
    1 tsp Tony Cachere's Creole seasoning

Directions

Brown the ground turkey with the chopped onions, bell peppers, and celery. Add beans, rice, tomatoes, jalepenos, and creole seasoning. Let simmer 20-30 minutes and then serve.

    Very Good
    I have always found working with ground turkey to be relatively dry, so I used 1/2 lb ground chicken and 3 breakfast-link sausages (with casing removed). I also cut out the jalepenos.
    This recipe turned out really delicious and it will definitely be my go-to meal whenever I have leftover rice.
