Ingredients

1 cup Quaker's Old Fashion Oatmeal
1 cup Rice Milk
1 cup whole wheat Flour
1/2 cup brown sugar
1/2 cup medium pear peeled,cubed, boiled and blended
2 egg whites
1 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. salt
1 tsp cinnamon
1 tsp. sugar
1/3 cup cashews, roasted
Directions
Makes 12 medium size muffins
Soak the oats in rice milk for about an hour.
Preheat oven to 400 degrees F.
Place paper muffin papers in muffin pan
Cook pear and blend in a blender.
Measure out 1/2 cup and add to oat mixture along with egg whites
In a separate bowl measure and stir dry ingredients together.
Add wet ingredients to dry and mix just until combined. Add Cashews or Almonds
Spoon mixture into muffin cups.
Combine the cinnamon and sugar and sprinkle over the top of each muffin
Bake for 20 -25 minutes or until done.
Remove from pan and place a clean teatowel over them untill cool.. This will aide in removing the paper cups. You may of course oil the pan and eliminate the paper cups but I try to cut back the fat content by using the paper.
