Introduction

Ingredients

    V8 Vegetable Juice, Low Sodium, 46 oz
    Mushrooms, fresh, 1 cup, pieces or slices
    Green Bell Pepper, cut into chunks
    Can of Diced Tomatoes (or can use fresh)
    Boca All American Classic Burger, 4 patties, cut into chunks (or can use veggie crumbles)
    2 packets Taco Seasoning (hot, mild, regular, any combo)
    Water, tap, 2 cup (more or less depending on preferred consistency)
    Eggplant, fresh, 2 cup, cubes (or carrots, squash, any kind of veggie can be substituted or added)
    onion 1 cup, cut into chunks
    1 15 oz can Black Beans, drained and rinsed

Directions

Put into a pot and cook about 30-45 min, until flavors blend and veggies are done.
