Ingredients

    6 ounces athenos reduced fat feta cheese, crumbled
    4 tablespoons best foods low-fat mayonnaise
    5 cups of red potatoes with skins, boiled, cubed
    1 cup fresh mint leaves
    1 1/2 cup low-fat plain yogurt

Directions

Boil potatoes and cut into cubes. Finely chop mint leaves. Mix mint with yogurt and mayonnaise. Stir mixture of mint, yogurt, and mayonnaise into cubed potatoes. Mix feta cheese throughout. Add salt and pepper as desired. Serve warm or cold. Makes 5 1-cup servings.
