Ingredients

2 tsp. Thai sweet chili sauce
1/2 teaspoon fresh ginger, graded
1 clove garlic, pressed
2 tsp. low sodium soy sauce
2 Tbs. sesame oil
1 cup firm tofu, drained and cut into small cubes
1/2 cup pea pods, cut in half
1/2 cup red cabbage, shredded
2 small carrots, shredded thickly
2 teaspoons peanuts, chopped
Directions
1. Make a marinade of the oil, garlic, ginger, soy sauce, and chili sauce in a resealable container. Add the tofu cubes and marinade for 1 hour in the refrigerator.
2. Steam the pea pods for one minute then soak in an ice bath.
3. Once the pea pods are cool, drain and toss with the carrots, cabbage, marinade and tofu.
4. Sprinkle servings with chopped peanuts,
