Introduction
I was NOT in the mood for mayo, in any form, so I used spicy brown mustard instead! It came out delicious - and I looooooove capers, so this was perfect! Ingredients
-
1 14.75 oz can of salmon
2 stalks celery, chopped
2 tbsp spicy brown mustard (more to taste)
2 1/2 tbsp capers
4 tbsp chopped onion (I used red)
pinch dried dill
pepper, to taste (opt)
Directions
Remove backbone and skin from salmon and mash well with fork.
Mix all ingredients well and chill for 30 minutes (not necessary but makes best flavor).
Serve over chopped lettuce or cabbage, cucumbers, and tomatoes.
------
TMJ variation:
Leave out the celery and use some celery salt or finely mince the celery. If you can't chew the onion, either, then sprinkle in some onion powder instead.
Makes about 3 cups. Serving size is a heaping half cup.
