Introduction
I am not a fan of cooked bell peppers as they seem to overpower the other flavors in dishes for me. So this may not be a traditional "ratatouille" but its a great way to get rid of the abundance of random veggies (eggplant, squash & tomatoes) that decided to grow all of a sudden in the garden :) Even the neighbor kids loved it! Ingredients

2 Large Eggplant, fresh, unpeeled (OR 4+ Chinese Eggplant cut in half and sliced on the diagonal, a mix of different types is also good)
3 Yellow Summer Squash
1 Large Onion
5 Red Ripe Tomatoes (if you don't have any fresh just use 2 can's)
1 Jar of your favorite Marinara Sauce (Or ~1.5 cup homemade)
1 can of low sodium Tomatoes
6-8 Cloves of Garlic
Salt & Pepper to taste (Salt not included in Nutritional Info)
~ 1/4 cup fresh Basil, chopped fine
~ 1/8 cup fresh Rosemary, chopped fine
~ 1/4 cup fresh Thyme, chopped fine
Directions
Wash & Prep veggies.
Put everything but the fresh herbs in the crock pot and stir. Cover and cook for 4 hours on high or 7-8 hours on low. About 10 min before you serve stir in fresh herbs.
