2362g (4 quarts) cubed butternut squash
    1 T. oil
    1-1/2 tsp. seasoned salt
    1-1/2 tsp. chili powder

Preheat oven to 400 degrees. Toss squash cubes with oil and seasonings. Place in one or two large sheet pans. In does not have to be in one layer but you don't want it more than two deep. Roast in oven for about 1 hour or maybe a little more. Stir occasionally toward the end of cooking. Roast until all liquid is evaporated and squash has carmelized a little, about 1 hour. Makes about 6 cups.

It's really good with some nutmeg grated over instead of the chilli. - 11/20/08

  • Delicious. My eight year old loved it too! I changed up the seasoning and just used cinnamon. This is the first time I've ever made squash bu it definitely won't be the last. - 1/12/14
