Introduction

A simple & elegant sauce made of balsamic vinegar, basil, garlic & freshly-roasted sweet red peppers. Pair with your favorite pasta & a salad for a satisfying meal. Ingredients

    1-1/2 c. roasted red pepper strips
    3 T. olive oil
    1 T. balsamic vinegar
    2 t. chopped garlic
    1-1/2 t. dried basil
    1/2 t. salt
    1 T. smooth peanut butter (trust me on this!)

Directions

1. To roast peppers (about 2 large red bell peppers), preheat oven to 400º. Put whole peppers, poked a few times with a fork, in a glass pan and roast for 30 minutes until skin blackens & blisters. Then put in a pot and cover with lead to steam for 20 minutes. Peel skin off peppers and tear into strips.

2. Put pepper strips, balsamic vinegar, olive oil, garlic, salt, basil & peanut butter into blender & puree until smooth. Heat in pot on stove until warmed through, if desired.

Yields about 8 1/4 c. servings.
