Ingredients

2 slices turkey bacon
1 large egg
1 handful, apprx. 1 cup, fresh spinach, chopped
1 1/2 tablespoons Gorgonzola crumbles
1/4 cup egg beaters
black pepper to taste
Directions
Preheat oven to 350 degrees.
Line a ramekin with the turkey bacon; one slice minimum around the side, and part of the second slice in the bottom. Crack egg in center, and "nest" the spinach around it. Sprinkle the Gorgonzola crumbles over the spinach and egg; sprinkle pepper lightly. Drizzle egg beaters over all within the bacon collar. Place ramekin on a round baking sheet and bake for 30 minutes. Remove from oven and allow to cool for 5-10 minutes. Serves one.
