Introduction
I came up with this simple, easy recipe when my pantry was low and I fashinoned it after the macadamia encrusted version we had in Hawaii. We loved it and I hope you will too.Enjoy!
NOTE: You can change this recipe to suit what you have on hand by substituting any type of fish or any type of nuts.

Ingredients

1/4 cup pistachio nuts, toasted and chopped
2 tablespoons honey mustard
2 tablespoons reduced-fat mayonnaise
16 ounces salmon fillets (4 - oz fillets)
Directions
1. PRE-HEAT oven to 400 and spray a baking dish large enough for the fillets with spray oil.
2. TOAST pistachio nuts on the stove top in a small pan over medium heat. Remove from heat and cool for a couple of minutes and then chopped them fairly fine. Place the chopped nuts on a plate.
3. IN a small bowl mix the honey mustard and mayonnaise. Stir to combine.
4. Rinse the fish and pat dry. Spread the mustard mixture on one side of each fillet. Press the mustard side of each fillet into the chopped nuts and then place them in the baking dish, nut side up.
5. BAKE for 8-10 minutes until the fish is done and flakes easily.
