    Pre-made double pie crust or boxed pie crust mix, prepared according to package directions
    3 eggs
    3/4 c. egg beaters
    2 cups reduced fat cheddar, shredded
    2 cups reduced fat Monterey Jack cheese, shredded
    1 cup Italian blend cheeses, shredded
    2 cups diced ham
    2 Tbl. butter
    2 medium zucchini, shredded
    8 oz. mushrooms, chopped
    1 medium onion, chopped
    1/3 cup milk
    1/2 tsp. oregano


Press pie crust into 9" x 12" pan (or two 8" or 9" square pans). Saute onions, zucchini, and mushrooms in butter until tender. Beat eggs and egg-beaters. Gradually add cheeses, ham, milk, oregano, and sauteed vegetables and mix well. Pour into prepared pan(s) and bake for 1 hour at 375 degrees.

May also be prepared the evening before and refrigerated overnight (covered), then baked in the morning before serving.
