Introduction

LOTS OF VEGETABLES, LIGHT ON THE FAT LOTS OF VEGETABLES, LIGHT ON THE FAT
Number of Servings: 8

Ingredients

    850g Minced Beef
    2 medium onions (or moe to taste)
    2 large courgettes
    1 large pepper
    2 green chillis chopped
    2 tbsp ground cumin
    2 tbsp worcester sauce
    1 knorr beef stock cube
    1 tim tomatoes
    400 ml water
    2 tins chilli beans (sainsburys)

Directions

fry off mince drain fat off add to stock pot
clean pan add onion + veg and sweat off slowly covered for 5mins
add to stock pot
add everything else except beans and cook for 1 hour on med heat or in oven at 180 celcius
add beans and cook for 25 mins

serves 8 with rice or baked potato
