Introduction
By week's end I usually have a collection of leftover meat (chicken, pork, etc) that I chop or shred and put into a can of vegetable soup. I can also finish off that bag of veggies before they ruin; just chop them up. Ingredients

1 18.5 oz can of Progresso Light Vegetable and Noodle
1 medium tomato (chopped)
1 small onion (chopped)
1 6 oz v-8 juice
1 cup cabbage (coursely chopped)
1 cup of whatever prepared/cooked leftover meat you happen to have in the fridge (shreaded)
Directions
Makes about 4 1-cup servings
Chop and shred as necessary to include ingredients in the soup.
Combine Progresso, tomato, onion, v-8 juice and the shreaded or chopped (already cooked) leftover meat of your choice into a pot and cover with lid to simmer for about 20 minutes. I add the cabbage in last so it doesn't overcook.
I don't know that much about spices; I'm experimenting with them to find what I like the best.
