Ingredients

Makes: 12 bars
Preparation time: 5 minutes to prepare, 60-90 minutes baking
1 lb part-skim ricotta cheese
1.5 tbsp semolina
7.5 tbsp sugar
1/2 cup water
1/2 cup cashew bits
1/4 cup raisins
cardamom powder
1 tsp of butter/ghee
pistachios/walnuts for garnish
Directions
Preheat oven to 325F.
.Fry the cashew bits in butter or ghee till golden brown and set aside.
.Mix the semolina with the ricotta cheese and knead thouroughly.
.Add the roasted cashew, raisins, sugar, water and cardamom powder and mix well.
.Pour into a greased pan leaving one inch at the top.
.Bake for 60-90 minutes, till top is brown.
.Remove from oven and cool in pan.
.Slice into 2x1 inch squares.
.Garnish, chill and serve.
