Introduction
I usually make this family favorite with ground beef. I've been making a separate meat-free pan for my vegetarian daughter, and thought I would make a little more and enjoy with her. Ingredients

1 tsp olive oil
2 Tbsp chopped celery
2 Tbsp chopped onion
2 Tbsp chopped bell pepper
1 clove garlic, minced
1 1/2 cups chili beans in chili sauce
1 cup dark red kidney beans
1/2 cup great norther beans
chili powder
Cayenne
cumin
pepper
Directions
Heat the olive oil in a medium saucepan, add the vegetables and saute. Add the beans and their juice, add the seasonings to taste (I usually use about 2 tsp chili powder, 1 tsp each of cayenne and cumin, and 1/2 tsp pepper - adjust up or down if you like it spicier or milder), stir and simmer for about an hour and a half.
You can serve your chili with any or all of the following (not included in nutritional calculations)
shredded cheese (cheddar or pepper jack)
sour cream
chopped onions
chopped chives
crackers
corn bread
